A blondie is the brownie’s fairer sister and whilst the texture can be similar, the delicious, caramel flavour of the blondie comes from soft brown sugar. In this cherry blondie recipe, I have used dried cherries because they bring a tiny amount of ‘sour’ to offset some of the ‘sweet’ and you can find these in some supermarkets (Sainsburys and Waitrose) and in health food stores (or online).
These are wonderful with a cosy cup of tea when the weather outside is cold and/or wet and are perfect for autumn.
Ingredients
12oz soft brown sugar
6oz melted butter
2 eggs
1tsp vanilla extract
a good pinch of salt
7oz plain flour
8oz dried cherries
Method
Pre-heat the oven to Gas 6/180 fan. Grease and line an 8inch x 8inch pan.
In a saucepan, gently melt together the butter, sugar, salt and vanilla extract and mix until smooth. Take the pan off the heat and mix in the two eggs.
Fold in the flour and stir through the cherries.
Pour into your baking pan and bake in the oven for 35-40 minutes. You want to make sure when you move the tin, the middle doesn’t ‘jiggle’ and the top has lots of cracks.
Allow to cool in the tin.
